Casa Del Formaggio, Italian Artisan Cheese Made in Negros

In order to make cheese, you got to have milk first. So if you want to make cheese regularly and in large quantities, you got to have your own cattle farm for steady supply of milk. That’s how Mercanti Veneziani Trading started producing their Casa Del Formaggio brand of Italian artisan cheeses by making use of the family-owned Montelibano Cattle Farm in Murcia, Negros Occidental.

The company is perhaps the first to locally produce quality Italian style artisan cheeses in Negros and the rest of the Philippines. They currently have Holstein cows from New Zealand which are grass fed and no chemicals are added to their diet to keep them natural and healthy. The cows are milked twice a day, at 3AM and 3PM, with an average of 12 liters of milk per cow. The milk are then brought directly to the processing area for cheese production.

Casa Del Formaggio was founded by Francesco Patron and Isabelle Montelibano in the year 2014. Francesco Patron was from Venice, Italy and he noticed the lack of cheese production in the Philippines. They started to learn the techniques of cheese making in Italy and came back to the Philippines to begin production of fine cheeses.
